Blueberry Bourbon BBQ Sauce

Finally a sweet tangy BBQ sauce you don't have to feel guilty about dipping, drizzling or slathering on just about anything! It is a great sauce for grilled veggies but is an amazing condiment on veggie paninis, mixed in with jackfruit for BBQ sliders, or added to baked beans.

Ingredients
- 2 cups Blueberries fresh or frozen
- ¼ cup Huckleberry or Pomegrante Balsamic Vinegar Try California Balsamic's line
- ¼ cup Bourbon
- ¼ cup Red Onion chopped
- ¼ cup Tomato paste
- 2 tablespoons Honey
- 1 tablespoons Molasses
- 2 cloves Garlic roughly chopped
- 1 teaspoon Gluten-free tamari soy sauce or Braggs Amino Liquids
- 1 teaspoon Smoked paprika
- ¼ teaspoon Salt adjust to taste
- ½ teaspoon Ground black pepper
- ½ teaspoon Cayenne pepper
- 2 Small or 1 large bay leaf
Instructions
- Combine everything into a medium saucepan over medium-high heat until it boils.
- Lower the heat and allow the mixture to simmer 15 minutes, just until the sauce starts thickening and the berries burst. Stir occasionally.
- Kill the heat and allow the mix to cool to room temperature. Remove bay leave(s).
- Empty the contents into a blender or food processor in 2 or 3 batches. Puree until the mix you have a proper-looking BBQ sauce.
