Instructions
Start with 1 cup of mashed potatoes—either leftovers or freshly made using a recipe of your choice or the recipe below.If making mashed potatoes from scratch, boil 1–2 small potatoes until soft, then mash with 2–4 tablespoons of unsweetened non-dairy milk, formula, or water to create a smooth base.
Stir in the oat flour, chia egg, baking powder (if using), and onion powder. If the mixture feels too dry, add a little liquid or unsweetened applesauce—1 tablespoon at a time—until it holds together well enough to shape into a mound on a parchment-lined baking sheet.
Using a spoon, scoop 1 heaping teaspoon (about 1 inch) of batter onto a baking sheet lined with parchment paper. Use a wet finger to shape if needed.
Bake at 350℉ until lightly golden brown, about 9-12 minutes depending upon your oven.
Let them cool a bit before serving to your Little Sprout. Enjoy warm or at room temperature.
