Weisswurst has gone Tofu! This is a creative twist on traditional Bavarian cuisine, transforming the classic Weisswurst sausage into a plant-based delight using tofu. The name literally translates to "white sausage" and refers to the sausage's pale color. 1lb.extra firm tofu drained and pressed at least 30 minutes up to 12 hours
¼cupBriggs amino liquids
1tablespoonagave
2tablespoonsapple cider vinegar
1tablespoonDijon mustard
1-2garlic clove minced
1teaspoonsmoked paprika
½teaspoononion powder
¼teaspoonground cardamom seed
¼teaspoonblack pepper
For Serving
2-4hot dog buns
ketchup
mustard
hot sauce
sauerkraut
Instructions
Cut tofu lengthwise into desired number of links. Optionally, shave down the corners of each link using a sharp knife, to get a round shape.
Stir Briggs Amino liquid, Dijon mustard, agave, vinegar, cardamom, garlic, smoked paprika, onion powder and pepper together in a shallow dish or well sealing plastic baggie.
Place tofu links into marinade and gently toss to coat. Allow to marinate at least 1 hour at room temperature, or up to 24 hours in the refrigerator (again, the longer, the better), tossing periodically to recoat with marinade.
Preheat oven to 350º. Arrange links on a parchment lined baking sheet. bake 15-20 minutes, turning about half way through cook time and basting with any excess marinade. Remove from oven.
If you want grill marks or a charred coating on your tofu dog, remove it from the oven 5 minutes early.Option 1: Use the GrillPreheat the grill to 400 degrees. Grill the tofu dogs for 1-2 minutes per side for grill marks.Option 2: Use a SkilletHeat a medium skillet with cooking spray. Cook the links in batches if needed until browned all over, about 1 minute per side for square cuts or by rolling them every few minutes for round ones.
Stuff links into buns and top with ketchup, mustard, hot sauce and/or sauerkraut.
