The result is two 12-inch or 15-inch pizzas. Each pizza is ideal for serving 2 people. Soft, chewy, and full of flavor, it’s the ultimate base for your favorite plant-based toppings.

Pizza has humble beginnings in ancient civilizations. In these societies, flatbreads topped with herbs, oils, and occasionally cheese were enjoyed in the Mediterranean region. Long before the word “pizza” existed, ancient Romans were already enjoying flatbreads topped with herbs, cheese, and olive oil.

Frescoes uncovered during the excavation of Pompeii are frozen in time by the eruption of Mount Vesuvius in 79 CE. They show people preparing and eating these early versions of pizza. These ancient flatbreads were far simpler than today’s cheesy, saucy creations. They laid the foundation for the pizza we know and love. This proves that the art of delicious, topped bread has been part of Italian life for over two thousand years.

The pizza we know today started in Naples, Italy. This happened during the late 18th and early 19th centuries. It was a simple, affordable meal for working-class Neapolitans, often topped with tomatoes, cheese, and fresh herbs. The iconic Margherita pizza was created in 1889 to honor Queen Margherita of Savoy. Topped with tomatoes, mozzarella, and basil, its ingredients represent the colors of the Italian flag.

Pizza’s popularity spread worldwide in the 20th century, especially after Italian immigrants brought it to the United States. Today, it’s a global favorite, with countless regional variations and toppings—from classic Neapolitan styles to creative plant-based and gourmet versions. You can enjoy it any way you like, from pineapple to plant-based sausage. Margherita pizza will always be my favorite. These days, I enjoy it with my Fresh Mozzarella’s Gone Plant-Based for a plant-based twist!

Bread flour has a higher protein content than all-purpose flour, usually around 12–14% compared to 10–11% in AP flour. This extra protein develops more gluten when kneaded, which gives pizza dough its signature chewiness and elasticity. It also helps the dough trap gases from the yeast. This process creates a light, airy crust. At the same time, it maintains a crisp exterior.

If you don’t have bread flour on hand, use a substitute. Mix 1 cup of all-purpose flour with 1½ teaspoons of vital wheat gluten. This combination makes a quick substitute. This simple hack gives your dough similar structure and chewiness, ensuring a restaurant-quality pizza even with pantry staples.

Using a pizza stone can transform your homemade pizza. A pizza stone mimics the floor of a brick oven by absorbing and evenly distributing heat. This crisps the bottom of your crust without burning it. The stone also pulls moisture from the dough for that perfect chewy-yet-crispy texture.

Don’t have a stone? No problem! You can achieve similar results by preheating an upside-down sheet pan. Sprinkle it with cornmeal or semolina to prevent sticking. This will also add a subtle crunch. Parchment paper also works for easy transfer and cleanup, making it simple to bake delicious pizza at home.

Pizza dough is incredibly versatile and perfect for making ahead. If you’re not using all the dough right away, freeze unused balls in a zip-top bag. You can also store them in the refrigerator for up to 2 days. When ready to bake, simply bring the dough to room temperature before shaping. This allows the dough to relax. It ensures it stretches evenly. You can enjoy fresh, homemade pizza anytime without the full rise time.

Add-Ins and Substitutions

Feel free to experiment and find the version that you love best!

Here is a list to rife off on: Add 1–2 tsp of dried oregano, basil, garlic powder, or Italian seasoning. Mix them with the dry ingredients for extra flavor. Olives or sundried tomatoes can be finely chopped and kneaded into the dough for a Mediterranean twist. Whole Wheat or Rye flours can replace up to half of the white flour. This substitution creates a heartier crust with a nuttier flavor. Lastly, try mixing in nutritional yeast for a subtle cheesy flavor if keeping it vegan.

Here are a few substitutions: Use 100% AP flour if bread flour isn’t available. For a chewier crust, add 1½ tsp vital wheat gluten per cup of AP flour. Swap agave with maple syrup or a small amount of sugar if desired. Lemon juice or white vinegar can replace apple cider vinegar. They help the dough rise. They also tenderize it. You can omit Vital Wheat Gluten if you don’t have it, but note the crust may be slightly less chewy. Lastly, make sure water is warm (110–115°F). Slightly cooler or warmer water may slow or speed up the yeast activity.

Storing

Refrigerate for up to 2 days or freeze for up to 3 months. Reheat in a skillet, microwave, toaster oven, or air fryer until warm.

Freeze & Thaw Your Pizza Dough

Have extra dough? No problem! Your 2-Hour Pizza Dough freezes beautifully, making it perfect for prepping ahead. Divide the dough into individual balls—one ball per pizza. Then, lightly coat each with a dusting of flour or a thin layer of oil to prevent sticking. Wrap each ball tightly in plastic wrap and place in a zip-top freezer bag, removing as much air as possible. Frozen dough can last up to 3 months without losing its quality.

When you’re ready to bake, transfer the dough to the refrigerator the night before to thaw. Once thawed, bring it to room temperature for 30–60 minutes before stretching—it should feel soft, pliable, and ready to shape. If the dough hasn’t fully puffed up after thawing, let it rise a little longer for an airy, chewy crust. Freezing dough is a simple way to have homemade pizza anytime with minimal effort!

Whole wheat flour is mainly composed of carbs but also has moderate amounts of protein. Carbs are the main nutritional component of wheat. Still, this grain harbors significant amounts of fiber, which may aid your digestion, promote gut health and reduce your risk of colon cancer. Its protein mostly comes in the form of gluten. Whole wheat may be a decent source of several vitamins and minerals, including selenium, manganese, phosphorus, copper, and folate. Wheat bran, which is present in whole wheat, may contain a number of healthy antioxidants, such as alkylresorcinols and lignans. Notably, white flour and other refined wheat products do not contain these compounds.

Gluten — which is found in all wheat — can harm individuals with celiac disease. This condition is characterized by damage to your small intestine and impaired absorption of nutrients. Adhering to a gluten-free diet is the only known treatment for celiac disease. Although wheat is the main dietary source of gluten, this protein can also be found in rye, barley, and many processed foods.

Ingredients
  

  • cups of wheat flour
  • cups of white AP flour
  • teaspoon of vital gluten wheat
  • 1 packet instant rapid-rise dry yeast (2½ teaspoons)
  • 1 teaspoon agave
  • 2 teaspoons fine sea salt
  • cups warm water
  • 2 teaspoons apple cider vinegar

Instructions
 

Make the Dough

  • Make the dough by combining the flour, yeast, salt, and sugar in a large bowl. Stir with a wooden spoon or dough whisk until everything is mixed together.
  • Combine warm water (110-115 degrees fahrenheit) and vinegar. Add to dry ingredients and stir with the wooden spoon or dough whisk until a shaggy dough forms and there is only a little bit of dry flour at the bottom of the bowl.
  • Knead the dough in the bowl with your hands until all the dry flour is incorporated. Keep folding and pressing it down with the heel of your hand until the dough doesn't stick to your hands and stays together in a smooth-ish ball. This should only take a few minutes.
  • Place the dough in a lightly floured large bowl, cover it with a lid or plastic wrap, and let it rise in a warm spot for 45 minutes to 2 hours. (I like to preheat my oven to 200°F for 20 minutes, then turn it off and place the dough inside to rise for about 45 minutes. If using this method, be sure to use an oven-safe bowl.)
  • Check your dough after 45 minutes. It should have puffed up and grown by at least 50 percent to fill out the bowl; on a warm day, it will probably have doubled by now, and there will be little bubbles on the bottom. You can ball up the dough and use it now, or you can let it rise for another hour or so to get a slightly airier dough.
  • Lightly flour a work surface, divide the dough in half, and shape each piece into a ball by stretching the edges underneath and grabbing the bottom of the ball with your fist. Cover and let rest for 10–15 minutes, or until the balls puff up a bit. (If you’re in a hurry, you can skip this extra resting time and roll out the dough balls right after you form them.)
  • To stretch/roll out the dough: Grab one dough ball and place it on a lightly floured surface. Set the other dough ball aside, still under the bowl so it won’t dry out.
  • Flatten the dough slightly with your hand or rolling pin. Gently stretch or roll it into a 12-inch round (or larger up to 15-inches if you like a thin crust), turning and tugging the edges as needed. Keep turning and tugging gently on the edges, letting it hang from your forearm to let gravity do its work, and gently moving your fist underneath from the center to the edges until you have a 12-inch round. If the flattened dough disk barely gives at all when you give it that first tug, you might be better off rolling it out instead. That’s it!

Bake the Pizza

  • Preheat your oven to the hottest temperature it will go (450-500 degrees Fahrenheit) with a pizza stone(preferable, see note 3) or sheet pan inside. (If using a sheet pan I have found it best to turn it over). 
  • For easier moving to the hot oven, place your pizza crust round on a piece of parchment and top with your favorite pizza sauce, vegan mozzarella cheese (include links), and vegetable toppings. Maybe add some vegan ricotta and vegan parmesan cheeses (include links). 
    1 cup tomato pizza sauce -divided
    2 cups vegan mozzarella -divided
    Vegetables such as mushrooms, spinach, peppers, onions, etc.
  • Transfer the pizza (on the parchment paper) to your hot pizza stone or upside down sheet pan and bake for12-15 minutes or until the crust is golden and the cheese is melted.
  • Repeat the stretching or rolling process with the second ball of dough and top and bake that one, too. Or, if you're only making one pizza, you can freeze the second ball in a zip-top bag or refrigerate it in an airtight container for up to 2 days – just make sure you thaw it out and let it come to room temperature before stretching.

Why use bread flour for pizza dough?
  1. Chewier crust: Gluten development gives pizza that classic chewy texture.

  3. Crispier outside: The combination of chewy interior and crisp exterior comes out better than with lower-protein flour.
How to Make Bread Flour at Home: If you only have all-purpose flour, you can make a simple substitute by combining 1 cup all-purpose flour (120 g) with 1 ½ teaspoons of vital wheat gluten. Whisk or sift together until evenly combined. Use this mixture as a 1:1 replacement for bread flour in pizza dough recipes. If you don’t have vital wheat gluten, using plain AP flour will still work, but your crust will be slightly less chewy.

Why use a pizza stone?
A pizza stone is a game-changer for homemade pizza because it mimics the floor of a traditional pizza oven. It absorbs and evenly distributes heat, which helps the crust cook quickly and develop a crisp, golden bottom without burning
The stone also draws out moisture from the dough, giving you that perfect chewy-yet-crispy texture that’s hard to achieve on a regular baking sheet.
No stone? Preheat a turned-over sheet pan and sprinkle it with cornmeal. Sprinkling cornmeal on the baking sheet prevents sticking and adds a lightly crisp texture to the bottom of the crust. You can also use semolina flour or parchment paper for the same benefit.
