Easy 2-Ingredient Granola

· · · ·

I make my own granola now because it is cleaner and much less expensive. This 2-ingredient granola recipe (salt doesn’t count) is meant to be divided into 6 portions with each being just enough for topping our morning or snack yogurt.

Sometimes I will double or triple the batch so I can make leftover granola bars. Feel free to add in any dried fruits or nuts and seeds but do so immediately when the granola comes out of the oven for the last time to avoid it burning. Any add-ins will increase calories so if you are watching your weight it is important to remember this.

The carbs in oats are mostly starches and fiber. They pack more protein and fat than most other grains and are a good source of beta glucan, a unique, soluble fiber linked to multiple health benefits. Oats offer high amounts of many vitamins and minerals, such as manganese, phosphorus, copper, B vitamins, iron, selenium, magnesium, and zinc. They are the only dietary source of powerful antioxidants called avenathramides. They also contain ferulic acid and phytic acid. Oats vast benefits include potentially reducing cholesterol and blood sugar levels. What’s more, they’re very filling and naturally gluten-free — but may be contaminated with glutenous grains.
