Leftover Granola Bars

I made my Easy 3-Ingredient Granola and had some leftover. What to do with it? How about some granola bars? Theses are not too sweet, not too chocolaty, gluten free, dairy free, no oil and no eggs.

That makes them a little guilt free for me!

I make these from leftover granola I made the week prior that didn’t make it into my plant based Oui yogurt (the I recycle the adorable jars to use for mini desserts later).

Add-Ins and Substitutions

If you don’t have sweetened coconut on hand any dried fruit will do. I have used dried apricots, cranberries, and raisins. Looking for some extra omega-3‘s? Toss in some walnuts. This is a great chance to use up the little bits stored away as leftovers of another recipe.

Storing

Store leftovers in an airtight container or sealed bag for 5 days.

Equipment

  • 9×11 Cake Pan
  • Large Bowl

Ingredients
  

  • 60 grams 1-1/2 cups Gluten Free or All Purpose Flour
  • 200 grams 2 cups Granola
  • 115 grams 1/2 cup Apple Juice
  • 75 grams 1/4 cup Peanut Butter
  • 45 grams 1/2 cup Sweetened Coconut
  • 80 grams 1/2 cup Chocolate Chips
  • 1 tsp Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1 tablespoon Ground Chia Seeds
  • 1 tablespoon Egg Replacer follow package directions or use 1 egg

Instructions
 

  • Preheat oven to 350℉.
  • Line a 9×11 inch cake pan with parchment paper.
  • Mix dry ingredients together in a marge bowl.
  • Mix wet ingredients in an smaller bowl until thoroughly combined.
  • Mix dry ingredients into wet in 2 batches.
  • Transfer to 9×11 inch cake pan lined with parchment paper.
  • Bake for 30 minutes. Remove form oven and let cool completely before cutting or they will crumble.
