This is a quick, easy, and both oil and dairy-free healthy version of Tuscan Tomato Bisque Soup.

It tastes like it is made with cream in a high-end restaurant! The bonus is it is low in calories. A savory fusion of fresh tomatoes and aromatic basil with the slightest whisper of crushed red pepper heat (if you choose to add). When cooking anything with tomato, you want it to lose its tomato-y” taste to slowly cook out the tomatoes’ acidity or tinniness, allowing their sweetness to emerge. Adding a sweetener (like agave or maple syrup) quickens the process.

Scatter some crispy croutons and chiffonade of basil on top. So quick and easy to prepare! You’ll be enjoying a bowl in less than 30 minutes.

Add-Ins and Substitutions

When I was creating this recipe I wanted a thick, rich, sweet basil profile. I didn’t want any dairy or oil so I decided to start with a premade tomato soup with as little ingredients as possible that listed no oils, no diary, and as little refined sugars as possible. READ THE LABLES! I have found Pacific and Campbells brands are the cleanest. I also like crushed tomatoes but if you like a chunkier soup, feel free to use a petite cut or diced tomatoes. My sweetener of choice is agave but honey or maple syrup works just fine too.

Storing

Store leftovers in an airtight container and reheat on stove top over medium heat for 5-8 minutes.

Equipment

  • Medium Stock Pot

Ingredients
  

  • 1 32oz Box Pacific Tomato Soup or Family Size Campbell's Tomato Soup
  • 1 32oz. Can Crushed Tomatoes
  • 1 Small Can Tomato Paste
  • 3 tablespoon Agave
  • 3 sprigs Fresh Basil
  • 1 tablespoon Dried Ground Basil
  • ¼ teaspoon Red Pepper Flakes

Instructions
 

  • Combine all ingredients excerpt of fresh basil. Bring to a simmer. Should take 5-10 minutes.
  • Roll basil leaves one on top of each other and twist to release the herbs oils. Add to the soup.
  • Simmer for 20 minutes. Turn heat off and allow to sit for another 10 minutes to allow the basil to steep into the soup. This is even better the next day!
