It really takes me back my hometown of Rochester, NY with it’s famous (or infamous) ethic food scene. One of the most popular regional brands for hots, sausages and other meat products is Zweigles. It was my all time favorite cookout (that’s what we Rochesterians call them, not BBQs) grilled hot dog back in the day! Having gone whole food plant-based in 2019, I have longed to recreate a plant based version of their white hot.

These Weisswurst Tofu Hots (Dogs) are an innovative dish that retains the essence of the original Weisswurst. It has the savory flavors and delicate texture which caters to both vegetarian and health-conscious palates while offering a fresh take on a beloved German favorite.

Serve it along with some of my favorite salads: Grilled Corn Pasta Salad (No Oil No Dairy), Authentic Sicilian Fennel and Orange Salad (WFPB No Oil), or WFPB Watermelon Tomato Basil Salad. Give my Homemade Baked Potato Chips a try for another great side!

Add-Ins and Substitutions

Weisswurst is typically seasoned with parsley, lemon, mace, onions, ginger, and cardamom. The sausage has a pale color and a mild taste, with a firm and bouncy texture which makes tofu the perfect substitute.

Storing

After baking your tofu dogs, these are best if eaten within 2 days. Store in an airtight container for up to 5 days.

Tofu is made from condensed soy milk in a process similar to cheese making. It’s often made from GMO soybeans, so if you are worried about GMOs, organic tofu is your best option. It is low in calories but high in protein and fat. It also contains many important vitamins and minerals, including calcium and manganese. All soy foods, including tofu, contain isoflavones, which are believed to be the main cause of tofu’s health benefits. It may improve several markers of heart health. Still, more studies are needed. Adding tofu to your diet may also help reduce your risk of certain cancers, help protect against diabetes, improve bone mineral density and brain function, and reduce symptoms of menopause and depression. Ingredients
  

  • 1 lb. extra firm tofu drained and pressed at least 30 minutes up to 12 hours
  • ¼ cup Briggs amino liquids
  • 1 tablespoon agave
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1-2 garlic clove minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon ground cardamom seed
  • ¼ teaspoon black pepper

For Serving

  • 2-4 hot dog buns
  • ketchup
  • mustard
  • hot sauce
  • sauerkraut

Instructions
 

  • Cut tofu lengthwise into desired number of links. Optionally, shave down the corners of each link using a sharp knife, to get a round shape.
  • Stir Briggs Amino liquid, Dijon mustard, agave, vinegar, cardamom, garlic, smoked paprika, onion powder and pepper together in a shallow dish or well sealing plastic baggie.
  • Place tofu links into marinade and gently toss to coat. Allow to marinate at least 1 hour at room temperature, or up to 24 hours in the refrigerator (again, the longer, the better), tossing periodically to recoat with marinade.
  • Preheat oven to 350º. Arrange links on a parchment lined baking sheet. bake 15-20 minutes, turning about half way through cook time and basting with any excess marinade. Remove from oven.
  • If you want grill marks or a charred coating on your tofu dog, remove it from the oven 5 minutes early.
    Option 1: Use the GrillPreheat the grill to 400 degrees. Grill the tofu dogs for 1-2 minutes per side for grill marks.
    Option 2: Use a SkilletHeat a medium skillet with cooking spray. Cook the links in batches if needed until browned all over, about 1 minute per side for square cuts or by rolling them every few minutes for round ones.
  • Stuff links into buns and top with ketchup, mustard, hot sauce and/or sauerkraut.
