  • 2 cups tomatoes diced
  • 1 cup ripe peaches peeled and diced

  • ½ teaspoon cumin
  • 1 tablespoon Peach Balsamic Vinegar optional ~ I love California Balsamic Vinegars
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  • Dice the peaches into small pieces. You can leave the skin on for added texture.
  • Dice the tomatoes into small cubes.
  • Finely chop the red onion and jalapeño pepper. Make sure to remove the seeds from the jalapeño if you prefer a milder flavor.
  • Chop the fresh cilantro.
