Fresh Peach Pico di Gallo
Ingredients

- ¼ cup chopped fresh cilantro
- ½ teaspoon cumin
- 1 tablespoon Peach Balsamic Vinegar optional ~ I love California Balsamic Vinegars
- Juice of 1 lime
- Salt and pepper to taste
Instructions
Prepare the Ingredients
- Dice the peaches into small pieces. You can leave the skin on for added texture.
- Dice the tomatoes into small cubes.
- Finely chop the red onion and jalapeño pepper. Make sure to remove the seeds from the jalapeño if you prefer a milder flavor.
- Chop the fresh cilantro.
