Grilled Peach Spinach with a Honey Miso Mustard Dressing
Grilling peaches is great to amp up their peachiness when they are hard, not ripe, or are low on the sweetness scale. Don’t feel like dealing the grill? No problem simply use a cast iron grill pan or traditional cast iron pan.

You can also achieve the same effect with the broil setting on your oven or a simple sauté pan. The Honey Miso Mustard Dressing makes this salad extra special. Any greens will do but I like a combination of baby spinach and spring lettuce mix topped with some spicy microgreens. Talk about nutrition packed!

While peaches are highlighted in this recipe, any stone fruit will do. Make sure you select firm fruit or they will turn to mush on the grill. The addition of berries really elevates this salad and the additional sweet component adds a layer of texture and flavor. This extra sweetness really rounds out the tanginess of the dressing and bitterness of the greens.
Storing
Only mix what you think you are going to each storing leftovers separately in an airtight containers or sealed bag for 2 days. After that the berries and stone fruits start t0 break down and are servable.

Grilled Peach Spinach Salad with Honey Miso Mustard Dressing
Equipment
- Small jar to mix salad dressing
- Cutting Board
- Grill or cast iron pan
- Knife
- Mandolin Option for slicing onion
Ingredients
Salad
- 4 cups Baby Spinach
- 2 cup Spring Greens Mix
- 1/2 cup Microgreens
- 2 Peaches
- 6 Strawberries Medium to large and sliced into thirds
- 1/4 cup Red onions Thinly sliced
Honey Miso Mustard Dressing
- 2 tablespoon Honey
- 2 tablespoon Miso Use white or yellow
- 2 tablespoon Dijon Mustard
- pinch Salt and Pepper
Instructions
Grill Peaches
- Heat grill to 350℉ or cast iron pan until . Cut peaches in half to remove the pit/stone. then cut each half into a quarter to have more surface area for gilling into quarters. place each peach flesh side down in the =skillet or grill. let stand for 90 seconds and turn to the other side. let grill for another 90 seconds and move to plate. Set aside to slightly cool.Note: If using a cast iron, to test if your skillet is hot enough, flick a few drops of water into it. The water should sizzle and dance. Do not preheat your skillet on medium or high heat. This is very important and applies not only to cast iron but to your other cookware as well. Very rapid changes in temperature can cause metal to warp. Start at a low temperature setting and go from there.
Honey Miso Mustard Dressing
- Combine all ingredients in a small jar and shalk until combined. Taste for proper seasoning and add additional salt and pepper to taste.
- Salad
- Wash and dry spring mix and spinach. Place both in a bowl to combine and set aside.
- Slice red onion very thin and set aside.
- Cut each strawberry into thirds. Cut each peach quarter in half.
- Build individual salads buy placing 3 cups of greens in a salad bowl. Top with red onions, micro greens, strawberries and peaches with gilled side up. Drizzle with 2 tablespoons of Honey Miso Mustard Dressing.
