Vegetable steaks are versatile and can be customized to suit your taste preferences. Select from cabbage, cauliflower, zucchini, eggplant, King Oyster mushrooms, Lions Mane mushrooms, and butternut squash all make great choices for vegetable steaks. 

Cabbage steaks are my personal favorite next to cauliflower. They are a delicious and creative way to prepare cabbage, turning this humble vegetable into a flavorful and satisfying main dish.

If you are looking for a perfectly roasted cabbage, well-seasoned with my caraway seasoning mix and a beautifully caramelized exterior and tender inside, look no further.  Began by slicing the head into eight wedges. Ensure each wedge was structurally sound by cutting through the core leaving it in tact. To achieve a deep caramelization, coat the surfaces with a thin layer of a vegetable-based spray and placed them flat on a baking sheet.

To create a steamy cooking environment, tightly covered the pan with foil for the first 20 minutes of roasting to ensure even cooking throughout the wedges. After removing the foil, allow the wedges to air-dry and caramelize naturally. Halfway through the uncovered roasting time, carefully flipped each wedge to ensure both sides were evenly browned.

You can also experiment with different seasonings and sauces too. I am sure you’ll love my caraway seasoning mix and by adding a splash of warmed balsamic vinegar or glaze as a sauce, dinner well be a snap to make.

Add-Ins and Substitutions

You can replace the fennel seed with anise seed. You can also add cumin seeds, brown mustard seeds, and fenugreek seeds.

Storing

Store in an airtight container in the refrigerator for 3 days. These leftovers are great added to soups, casseroles, grain bowls or turned int a salad with a zesty dressing.

Vitamin K2 (menaquinone): This form is found in animal sources and some fermented foods. It is also produced by bacteria in the large intestine. So you can see how cabbage is a terrific source of vitamin K1, delivering 56% of the DV in a single cup (89 g) (Trusted Source). One of its main functions is to act as a cofactor for enzymes that are responsible for clotting the blood (Trusted Source). Without vitamin K, the blood would lose its ability to clot properly, increasing the risk of excessive bleeding.

Caraway seeds are the dried fruit, or achenes, of the caraway plant (Carum carvi), a member of the parsley family. These seeds have a warm, earthy, and slightly sweet flavor with a hint of citrus. Caraway seeds are commonly used as a spice in various cuisines around the world and are known for their aromatic and distinctive taste.

Mustard seeds contain copious amounts of vitamins A, C, and K, which are crucial for fighting chronic diseases, better vision and eye health, and blood clotting mechanisms.

Fennel and fennel seeds provide important nutrients, such as vitamin C, calcium, magnesium, potassium, and manganese.  All parts of the fennel plant are rich in powerful antioxidants like chlorogenic acid, limonene, and quercetin — all of which may benefit health. They contain fiber, potassium, magnesium, and calcium — all of which are essential for good heart health. Fennel has antibacterial properties and may improve mental health, relieve menopausal symptoms, and reduce inflammation. Still, it’s unlikely that fennel or its seeds would offer the same effects when eaten in small amounts.

Celery seed might have many effects on the body, including lowering blood sugar and blood pressure causing sleepiness. People use celery to repel mosquitos, for prediabetes, goutrheumatoid arthritis, and many other conditions, but there is no good scientific evidence to support these uses.

Ingredients
  

  • 1 Head of Cabbage
  • 2 tablespoons Caraway seasoning mix
  • 2 tablespoons Fig Balsamic Vinegar optional

Instructions
 

  • Preheat oven to 425℉.
  • Cut cabbage into 1 inch discs.
  • Lay cabbage discs on small sheet pan lined with parchment paper.
  • Sprinkle each with caraway seasoning mix.
  • Bake/roast for 40-45 minutes until fork tender. I like to leave a bit of crunch to mine.
