Vegetable steaks are versatile and can be customized to suit your taste preferences. Select from cabbage, cauliflower, zucchini, eggplant, King Oyster mushrooms, Lions Mane mushrooms, and butternut squash all make great choices for vegetable steaks.
Cabbage steaks are my personal favorite next to cauliflower. They are a delicious and creative way to prepare cabbage, turning this humble vegetable into a flavorful and satisfying main dish.
If you are looking for a perfectly roasted cabbage, well-seasoned with my caraway seasoning mix and a beautifully caramelized exterior and tender inside, look no further. Began by slicing the head into eight wedges. Ensure each wedge was structurally sound by cutting through the core leaving it in tact. To achieve a deep caramelization, coat the surfaces with a thin layer of a vegetable-based spray and placed them flat on a baking sheet.
To create a steamy cooking environment, tightly covered the pan with foil for the first 20 minutes of roasting to ensure even cooking throughout the wedges. After removing the foil, allow the wedges to air-dry and caramelize naturally. Halfway through the uncovered roasting time, carefully flipped each wedge to ensure both sides were evenly browned.

You can replace the fennel seed with anise seed. You can also add cumin seeds, brown mustard seeds, and fenugreek seeds.
Storing
Store in an airtight container in the refrigerator for 3 days. These leftovers are great added to soups, casseroles, grain bowls or turned int a salad with a zesty dressing.
