Vegetable steaks are versatile and can be customized to suit your taste preferences. Select from portobello mushrooms, King Oyster mushrooms, Lions Mane mushrooms, cabbage, cauliflower, zucchini, eggplant, and butternut squash all make great choices for vegetable steaks. You can also experiment with different levels of the individual spices in the seasoning mix to suit your preferences and keep the sodium low or add none at all.

Cabbage steaks (my personal favorite next to cauliflower) are a delicious and creative way to use this Italian “Sausage” spice seasoning mix, turning it or any vegetable into a flavorful and satisfying main dish.

It is also a great spice mix for adding to plant-based yogurt for a dip, any sauce for pasta or pizza, and in general a seasoning mix for anything else that you’d like to elevate the flavor profile.

Caraway seeds are the dried fruit, or achenes, of the caraway plant (Carum carvi), a member of the parsley family. These seeds have a warm, earthy, and slightly sweet flavor with a hint of citrus. Dried Parsley is rich in vitamins A, C, and K. It contains antioxidants that may help reduce inflammation. Also, it may contribute to improved digestion.

Italian Seasoning (Thyme, Basil, Greek Oregano): Thyme: Contains vitamins C and K, and has antimicrobial properties. Basil: Good source of vitamin K, A, and antioxidants. Greek Oregano: High in antioxidants and may have anti-inflammatory properties.

Garlic Granules contain allicin, a compound with potential health benefits. It may have antimicrobial and anti-inflammatory properties. It as also been linked to heart health and immune system support.

Black Peppercorns contain piperine, which may enhance nutrient absorption. They may have antioxidant properties. It can also stimulate digestion and metabolism.

Paprika is rich in vitamins A, E, and antioxidants. It contains capsaicin, which may have metabolism-boosting effects. It may contribute to heart health.

Onion Granules are a good source of vitamins C and B6. It contains antioxidants that may have anti-inflammatory effects. It also may support heart health and immune function.

  • 1 tablespoon plus 1 teaspoon fennel seed
  • 1 tablespoon dried parsley
  • 1 tablespoon Italian seasoning or 1 tsp each thyme, basil, Greek oregano

  • 1 tablespoon raw cane sugar optional
  • 1 tablespoon garlic granules
  • 2 teaspoons black peppercorns

Instructions
 

  • Place all spices in a blender or spice grinder and pulse until the fennel seed are broken down.
